Tajine — The Heart of Moroccan Cooking

Slow-cooked for hours in a clay pot over a charcoal fire — lamb with prunes and almonds, chicken with preserved lemon and olives, or seasonal vegetables with chermoula. Each tajine is a labour of patience and love.

Couscous — The Dish of Celebration

Hand-rolled semolina steamed three times over a rich broth, topped with slow-braised lamb or chicken, seven vegetables, and a drizzle of golden tfaya — caramelised onions and raisins. A meal that brings people together.

Harira — The Soup of the South

A thick, warming tomato and lentil soup with chickpeas, fresh coriander, celery, and vermicelli — seasoned with cumin, ginger, and a squeeze of lemon. Served with dates and chebakia, the way it has been eaten in Morocco for generations.

Mechoui — Whole Roasted Lamb

For groups and special celebrations, we prepare mechoui — a whole lamb slow-roasted in a traditional pit until the meat falls from the bone. The ultimate expression of Berber hospitality and Southern Moroccan generosity.

The Mint Tea Ceremony

No meal at Tinejdad Auberge is complete without the Moroccan mint tea ritual. In Morocco, tea is not just a drink — it is a gesture of welcome, respect, and friendship. It is poured high to create froth, served sweet, and always offered three times:

1 The First Glass — Bitter as Life

Strong gunpowder green tea, barely sweetened. An acknowledgement of the hardships of the journey and the world outside.

2 The Second Glass — Sweet as Love

The same tea, now with generous fresh mint and sugar. The heart of the ceremony — warm, fragrant, and deeply comforting.

3 The Third Glass — Gentle as Death

The final glass — lighter, smooth, and peaceful. A moment of stillness before returning to the world. To refuse is to leave too soon.

Dining at the Auberge — How It Works

Breakfast is included with every room and served every morning in our courtyard. Lunch and dinner are available on request — simply let us know in advance and we will prepare a full Moroccan meal for you and your group.

We do not run a commercial restaurant with a fixed menu and set hours. Instead, we cook the way a Moroccan family cooks — when you are hungry, for as many people as are at the table, with whatever is freshest that day. This is how food should be.
